This Pedro Ximénez from M.S. is crafted from overripe grapes that are subsequently sun-dried. After fermentation, the wine is fortified to 10% alcohol and, following winter, additional alcohol is added to reach 15%. At this stage, the wine begins to age using the solera method for five years. The result is spectacular. It showcases an ebony hue with iodine highlights, exhibiting a wide leg and a visually appealing density. On the nose, it offers extremely rich aromas, dominated by sweet notes of dried fruits such as figs, raisins, and dates, complemented by scents of stewed and candied fruits. On the palate, it is very sweet, dense, with a smooth texture and toasted flavours.
