Antao do Deserto is a white wine that forms part of the Eremitas trilogy created by Mateus Nicolau de Almeida, designed to showcase the differences between three wines from adjacent parcels by the Douro River but located at varying altitudes. All are made with the Rabigato grape, indigenous to Douro Superior, known for producing wines with good acidity, remarkable aging potential, and often serving as the foundation for the region's great whites. This Antao do Deserto comes from parcels situated at 350 metres above sea level, presenting a more rounded and smooth character. Following a brief maceration period in granite lagares, the grapes are pressed, and the must is decanted by gravity into underground cement tanks where, after fermentation, it matures for one year on its lees.
