This Pedro Ximénez from M.S. is crafted from overripe grapes that are subsequently sun-dried. After fermentation, the wine is fortified to 10% alcohol, and following the winter months, additional alcohol is introduced, bringing the total to 15%. At this stage, the wine begins its maturation process using the solera method for five years. The result is spectacular. It boasts an ebony hue with iodine reflections, a broad tear, and a visual impression of great density.
On the nose, it offers extremely rich aromas, predominantly sweet notes of dried fruits such as figs, raisins, and dates, complemented by scents of stewed and candied fruits. On the palate, it is exceptionally sweet, dense, with a smooth texture and roasted flavours.
