Maestro Sierra's Amontillado is the result of two distinct aging processes. Initially, the fortified white wine undergoes biological aging under a flor veil for five years at 15º. Following this, alcohol is added to bring the wine to 17º, and it enters an oxidative phase lasting a further fifteen years, employing the solera method.
In appearance, it boasts a pale amber hue, with enticing aromas of fine wood and hazelnuts, reflecting its unique biological aging. On the palate, it is silky, complex, and intriguing, marked by balanced acidity and a long-lasting finish.
